Step-by-Step Instructions

Step 1: Prepare the Dry Mix (Intensity: Low)

In a large mixing bowl, sift together the flour, baking powder, salt, and sugar. Sifting helps create lighter scones by adding air into the mixture. This is an important step for achieving a soft, fluffy texture.


Step 2: Rub in the Butter (Intensity: Medium)

Add the cold cubed butter to the flour mixture. Using your fingertips or a pastry cutter, rub the butter into the flour until the mixture resembles fine breadcrumbs. The key here is to work quickly so the butter stays cold. Cold butter creates flaky layers inside the scones.

Stir in the raisins or mixed dried fruit evenly. Make sure the fruit is coated lightly in flour to prevent it from sinking or clumping together.

In a separate bowl, whisk the egg and milk together. Slowly add this wet mixture into the dry ingredients. Mix gently with a fork or spatula until the dough just comes together. Avoid overmixing, as this will make the scones dense instead of fluffy.
