Golumpki Soup

Instructions

  1. Brown the Beef
In a large pot, brown the ground beef with the diced onion and red pepper until fully cooked. Drain excess grease.

  2. Build the Broth
Add beef broth, water, diced tomatoes, tomato sauce, tomato paste, and all seasonings to the pot. Bring to a boil, then reduce heat to medium-low.

  3. Simmer
Return the cooked ground beef to the pot. Cover and simmer for 1 hour, allowing flavors to develop.

  4. Add Rice & Cabbage
Stir in the rice and diced cabbage. Continue cooking for another 30 minutes, or until the rice is tender and the cabbage is soft.

  5. Serve & Enjoy
Taste and adjust seasoning if needed. Serve hot and enjoy a cozy, filling bowl of comfort 🍲

Tips & Variations

  • Extra Flavor: A splash of Worcestershire sauce or a pinch of red pepper flakes adds depth.

  • Low-Carb Option: Skip the rice or substitute cauliflower rice (add during the last 10 minutes).

  • Meal Prep Friendly: This soup tastes even better the next day and freezes well.

This is one of those warm-your-soul, big-pot recipes that feeds a crowd and keeps everyone happy. If you want, I can turn this into a slow cooker versionnutrition breakdown, or a freezer-friendly guide 👍
