No-bake homemade crunch bars

In a small saucepan over low heat, combine peanut butter and honey.
Stir until smooth and slightly warm.
Remove from heat and stir in vanilla extract and a pinch of salt.
Mix the dry ingredients:
In a large bowl, combine rice cereal, oats, nuts (if using), and chocolate chips.
Pour the warm peanut butter mixture over the dry ingredients.
Stir until everything is evenly coated.
Press into pan:
Transfer mixture to prepared pan.
Press firmly with a spatula or clean hands to compact the bars.
Chill and set:
Refrigerate for at least 1–2 hours until firm.
Cut and serve:
Lift out of pan using parchment overhang.
Cut into bars or squares and enjoy!

For extra chocolatey bars, drizzle melted chocolate on top before chilling.
You can swap peanut butter for almond, sunflower, or cashew butter to change the flavor.
Add dried fruit, seeds, or shredded coconut for more texture and flavor.
Store bars in an airtight container in the fridge for up to a week, or freeze for longer storage.
